Building The Dish: Step-By-Step Guide

  • Step 1
  • In a medium bowl, mix the peach preserves, olive oil, soy sauce, apple cider vinegar, dijon mustard, minced garlic, salt, black pepper, and red pepper flakes until smooth. Set aside.
  • Step 2
  • Pat the chicken dry. Combine the salt, black pepper, and chili powder, and season the chicken evenly.
  • Step 3
  • Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about five minutes. Flip, reduce the heat to medium-low, and cook for an additional 5 minutes, until the chicken is cooked through. Remove from the heat and tent with aluminum foil to keep warm.
  • Step 4
  • Increase the heat to medium and add the sliced jalapenos to the skillet. Cook for a few minutes to soften them, then add the sliced fresh peaches and cook for a few more minutes, until they are softened.

  • 1/2 cup peach preserves
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 1 tsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp red pepper flakes

FOR THE CHICKEN

  • 2 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 2 tbs olive oil
  • 1 large jalapeno pepper, thinly sliced
  • 1 medium red onion, thinly sliced

PEACHES

  • 2 large yellow peaches, pitted and sliced

Instructions
