Sweet Honey Cornbread

Cornbread In A Jiff

Ahh, good ole-fashioned sweet honey cornbread was a common side dish in my home growing up. But we never made it from scratch. Jiffy Cornbread Mix did the trick. It was easy to prepare in a little time after my parents got home from work. Was it the tastiest? No. Was it the most moist? No. Did it fill our bellies? Yes.

This tiny box of cornbread mix was all I knew, so when I started to explore more in the kitchen, I tried my hand at homemade sweet honey cornbread. It came out dry, crumbly, and lacking flavor. I tried saving it by dousing it in butter and honey, but alas, it was a sad loaf.

Because of my previous experience with homemade cornbread, I was always a little hesitant about ordering some while out and about. Out of curiosity, I would order it, and would be filled with disappointment. It would be dry and flavorless, just like what we had at home. I was beginning to think that was the norm for cornbread, until I tried some sweet honey cornbread at a local BBQ spot.

That cornbread is what I had imagined for all those years. Sweet, moist, with just the right amount of honey butter perfectly complementing it. It took some time and lots of experimenting to match that flavor, but I did it! Moist with a touch of sweet cornbread was on my table in a jiff!

Why THIS Recipe?

So many cornbread recipes turn out dry and bland bread, and no amount of butter and honey can save it. This recipe gives you just the right amount of moisture and enough sweetness that will keep you interested. It utilizes ingredients you most likely already have in your kitchen cupboard and comes together quickly.

The Things Inside: The Ingredients

  • All-Purpose Flour – no need to be particular, any brand will do
  • Yellow Cornmeal – any brand will be okay, but fine cornmeal makes it a bit smoother
  • Baking Powder – just a generic brand is grand
  • Baking Soda – any kind is a-okay
  • Salt – plain old salt is perfect
  • Butter – unsalted sweet cream butter is all you need
  • Vegetable Oil – any brand is ideal, you could always swap this with an alternative oil if you’d prefer
  • Granulated Sugar – just regular white granulated sugar from the shelf
  • Honey – I prefer using a local honey, but feel free to use what brand works for you
  • Eggs – fresh, large eggs, and local are preferred
  • Buttermilk – whole-fat buttermilk is best

Building The Dish: Step-By-Step Guide

  • Step 1
  • Prepare the skillet and oven. Preheat the oven to 375*F.
  • – If using a cast-iron skillet: While the oven is preheating, place your skillet in the oven with about 2 tablespoons of butter in the bottom to melt.
  • – If using a 9 x 9-inch pan: Melt butter and brush it on the bottom and sides of the pan; no need to warm it in the oven.
  • Step 2
  • Combine the dry ingredients. Whisk together the all-purpose flour, yellow cornmeal, baking powder, baking soda, and salt in a bowl.
  • Step 3
  • Mix the wet ingredients. Melt the butter, then mix in the oil, granulated sugar, and honey. Add the eggs and buttermilk, and stir until fully incorporated.
  • Step 4
  • Combine the dry with the wet. Slowly stir in the dry ingredients into the wet ingredients, without overmixing. Let the batter rest for a few minutes.
  • Step 5
  • Get ready to bake.
  • – If using a cast-iron skillet: Remove the warm skillet from the oven and brush the melted butter up the sides. Pour the batter into it, smoothing out the top.
  • – If using a 9 x 9-inch pan: Transfer the prepared batter into the pan and smooth out the top.
  • Step 6
  • Bake time! Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. If the top of the cornbread is browning too quickly, place an aluminum foil tent over the top for the rest of the bake time.
  • Step 7
  • Let the sweet honey cornbread cool for about 10 minutes before slicing.

The Perfect Pairing

Cornbread pairs well with most soups and stews, such as an Old-Fashioned Goulash or Easy Taco Soup. It is an ideal side for some Air Fryer Chicken Tenders or Cowboy Butter Chicken. Serve it warm with some honey butter on top, or feel free to mix in cheese, peppers, or corn to make it a little savory, then top with hot honey for an extra spicy kick!

Have Leftovers?

Unless you are feeding a whole family, you will probably have some cornbread leftover and will need to know how to store it properly. No matter how you store it, remove it from the pan you baked it in and put it in an airtight container or a storage bag. Sweet honey cornbread stays fresh at room temperature for up to three days. If you prefer to keep it fresh a little longer, place it in the fridge for up to a week or in the freezer for up to a few months. To reheat, place a damp paper towel over the top and zap it in the microwave for about 30 seconds, or reheat in a warm oven.

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup yellow cornmeal
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup + 2 tbsp unsalted sweet cream butter, melted
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup honey
  • 2 eggs
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 375*F. 
  2. While the oven is preheating, add your cast-iron skillet to warm with about 2 tbps of butter in the bottom to melt.
  3. Whisk together the all-purpose flour, yellow cornmeal, baking powder, baking soda, and salt in a bowl.
  4. Melt the remaining butter in a bowl. Mix in the vegetable oil, sugar, and honey.
  5. Add the eggs and buttermilk and mix until fully incorporated.
  6. Slowly mix the dry ingredients into the wet ingredients, ensuring not to overmix.
  7. Let the batter rest for a few minutes.
  8. Remove the warm cast-iron skillet from the oven and brush the melted butter up the sides.
  9. Pour the prepared batter into the skillet and smooth out the top.
  10. Bake for 30-35 minutes, or until an inserted toothpick comes out clean.
  11. Let the cornbread cool for about 10 minutes before slicing. Enjoy!

Notes

  • Feel free to make some variations with this recipe by adding peppers, corn, and/or cheese to the batter before baking and topping with hot honey rather than sweet honey.
  • If using a 9 x 9-inch pan instead of a cast-iron skillet, reduce the baking powder to 1 tsp to prevent overflow.
  • If using a 9 x 9-inch pan, do not warm it with butter in the oven. Simply use melted butter and brush it on the bottom and sides of the pan.
  • If the top of the cornbread is browning too quickly, cover with an aluminum foil tent for the remainder of the baking time.
