Ingredients
- 2 medium-sized zucchinis, shredded and drained
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1/3 cup parmesan cheese, freshly grated
- 1/4 cup fresh dill, chopped
- 2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 3 tbsp olive oil
Instructions
- Wash your zucchini, then shred using a box grater.
- Squeeze out the excess moisture from the shredded zucchini by using a clean kitchen towel or paper towels.
- In a large bowl, combine the shredded zucchini, all-purpose flour, beaten eggs, freshly grated parmesan cheese, chopped fresh dill, garlic powder, sea salt, and freshly cracked black pepper.
- Heat the olive oil in a skillet over medium heat.
- Drop heaping spoonfuls into the warm skillet and flatten slightly.
- Fry for approximately 4-5 minutes, or until golden brown.
- Flip and fry for an additional 4-5 minutes.
- Place on a paper towel to drain. Enjoy!
