Description

This recipe for jalapeno peach chicken is a perfect blend of sweet and heat. Fresh peaches in a sweet and spicy sauce with juicy chicken that leaves you wanting more. Serve on a bed of rice or with some mashed potatoes and you have yourself a hearty summer meal.

FOR THE PEACH GLAZE

  • 1/2 cup peach preserves
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 1 tsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp red pepper flakes

FOR THE CHICKEN

  • 2 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp chili powder
  • 2 tbsp olive oil
  • 1 large jalapeno pepper, thinly sliced
  • 1 medium red onion, thinly sliced

PEACHES

  • 2 large yellow peaches, pitted and sliced

Instructions

  1. In a medium bowl, mix the glaze ingredients until smooth. Set aside.
  2. Pat the chicken dry. Combine the salt, black pepper, and chili powder, and season the chicken evenly.
  3. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for about five minutes. Flip, reduce the heat to medium-low, and cook an additional five minutes until cooked through. Remove from the heat and tent with aluminum foil to keep warm.
  4. Increase the heat to medium and add the sliced jalapenos to the skillet. Cook for a few minutes to soften them, then add the sliced fresh peaches and continue cooking for a few more minutes until they are softened.
  5. Pour the glaze into the warm skillet, stirring to coat the softened jalapenos and peaches.
  6. Add the chicken back into the skillet, spoon the glaze over the top, and cook for an additional minute or two to heat through. Enjoy!
