I am a breakfast food fanatic, so when I discovered crepes, I was intrigued. They’re like pancakes, but ultra-thin without lacking the softness of a pancake. They can also be made sweet or savory. They hold their shape well enough that they can be rolled or folded to make anything you imagine. And they are versatile enough that you can truly eat them any time of day for any meal!

Once I knew more about them, I couldn’t wait to make my own! A new recipe to explore and a way for me to really put my flair on it with toppings that excite me. It didn’t take much time to find a recipe, and to my delight, it didn’t require much effort. Just your basic pantry staples and a few minutes of your time.

The first few crepes that I made fell apart. I didn’t realize the technique that crepes required. Although the recipe is simple, there is an art to it. With each crepe, I was learning something new and was slowly perfecting my skills in this newfound art form.

Before I knew it, I was eating classic French crepes in France! Taking a seat in a little cafe across from Musée d’Orsay, the group ordered an assortment of French breakfast classics. But I knew what I was there for: a French crepe accompanied by a very large coffee. Whipped cream, chocolate sauce, and sprinkles topped the crepe, transforming breakfast into dessert – the best way to start any day.

Although they are typically associated with breakfast, they can be customized to suit your taste. These crepes come together in almost no time, in one bowl, and are versatile enough to satisfy any or all of your taste buds!

The Things Inside: The Ingredients

  • All-Purpose Flour – just your generic pantry staple works
  • Eggs – make sure they are fresh
  • Milk – a higher-fat milk is ideal for a creamier texture
  • Unsalted Sweet Cream Butter – any brand will do
  • Salt – table salt is all you need

Building The Dish: Step-By-Step Guide

  • Step 1
  • Prep your ingredients. Sift your flour into a bowl and melt the butter.
  • Step 2
  • Add the sifted all-purpose flour, eggs, milk, salt, and melted unsalted sweet cream butter into a blender. If you don’t have a blender, whisk all of the ingredients in a large bowl until they are fully mixed, ensuring no lumps remain.
  • Step 3
  • Make the batter! Blend until all the ingredients are mixed and no lumps remain.
  • Step 4
  • Warm a skillet over medium heat with a little bit of butter or oil.
  • Step 5
  • Let’s make crepes! Pour about 1/4 cup of the crepe batter into the warm skillet, swirling the skillet to ensure it coats the bottom of the pan.
  • Step 6
  • Cook until the bottom of the crepe is golden brown and the edges are crispy. This should take about 30 seconds to one minute.
  • Step 7
  • Gently flip the crepe and cook the other side for about one minute.
  • Step 8
  • Let the crepes cool completely on a plate before serving so the toppings won’t melt.

Ingredients

  • 4 eggs
  • 3 cups milk
  • 1/2 tsp salt
  • 2 tbsp unsalted sweet cream butter, melted

Instructions

  1. Add the sifted all-purpose flour, eggs, milk, salt, and melted unsalted sweet cream butter into a blender and blend until no lumps remain. 
  2. Warm a skillet on medium heat with some butter or oil.
  3. Pour about 1/4 cup of the batter into the warm skillet, then swirl until the batter coats the bottom of the skillet.
  4. Cook until the crepe is golden brown on the bottom and has crispy edges (approximately 30 seconds to 1 minute).
  5. Gently flip the crepe and cook the other side for about one minute.
  6. Let the crepes cool completely on a plate before serving. Enjoy!
