Sweet Honey Cornbread

Description

This recipe uses pantry staples such as flour, cornmeal, butter, and honey, and blends them perfectly into a moist, flavorful comfort dish that can be altered to your liking. Sweet Honey Cornbread is ideal to pair with your favorite Southwest meal or have on its own!


Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup yellow cornmeal
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup + 2 tbsp unsalted sweet cream butter, melted
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup honey
  • 2 eggs
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 375*F. 
  2. While the oven is preheating, add your cast-iron skillet to warm with about 2 tbps of butter in the bottom to melt.
  3. Whisk together the all-purpose flour, yellow cornmeal, baking powder, baking soda, and salt in a bowl.
  4. Melt the remaining butter in a bowl. Mix in the vegetable oil, sugar, and honey.
  5. Add the eggs and buttermilk and mix until fully incorporated.
  6. Slowly mix the dry ingredients into the wet ingredients, ensuring not to overmix.
  7. Let the batter rest for a few minutes.
  8. Remove the warm cast-iron skillet from the oven and brush the melted butter up the sides.
  9. Pour the prepared batter into the skillet and smooth out the top.
  10. Bake for 30-35 minutes, or until an inserted toothpick comes out clean.
  11. Let the cornbread cool for about 10 minutes before slicing. Enjoy!

Notes

  • Feel free to make some variations with this recipe by adding peppers, corn, and/or cheese to the batter before baking and topping with hot honey rather than sweet honey.
  • If using a 9 x 9-inch pan instead of a cast-iron skillet, reduce the baking powder to 1 tsp to prevent overflow.
  • If using a 9 x 9-inch pan, do not warm it with butter in the oven. Simply use melted butter and brush it on the bottom and sides of the pan.
  • If the top of the cornbread is browning too quickly, cover with an aluminum foil tent for the remainder of the baking time.
