Scale
- 6 slices bacon, chopped
- 1 large onion, diced
- 3 celery stalks, diced
- 2 medium carrots, peeled and diced
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- 3 cups chicken broth
- 2 cups heavy whipping cream
- 4 cups corn
- 2 large yukon potatoes, peeled and diced
- 2 tsp italian seasoning
- 1/4 tsp cayenne pepper, optional
- 1/4 tsp ground mustard
- 2 tsp black pepper
- 2 tsp salt
Instructions
- Prep all ingredients by peeling, dicing, and measuring everything to make the cooking process smooth.
- Using kitchen shears, cut the bacon into bite-sized pieces, then cook in a large dutch oven over medium-high heat until crispy.
- With a slotted spoon, transfer the cooked bacon to a paper towel-lined plate, leaving the rendered bacon fat in the dutch oven.
- Sauté the diced onion, celery, and carrots over medium heat in the leftover bacon grease for approximately 5 to 7 minutes, or until the onion is golden and tender.
- Stir in the minced garlic and cook for about 30 seconds or until fragrant.
- Sprinkle the all-purpose flour over the sautéed vegetables and cook for about one minute, stirring constantly.
- Pour in the chicken broth, scraping the bottom of the dutch oven, then slowly mix in the heavy whipping cream, corn, diced potatoes, italian seasoning, cayenne pepper, ground mustard, and the cooked bacon.
- Bring the chowder to a boil, then reduce heat and simmer with the lid slightly covering the pot for 15 to 20 minutes, or until the potatoes are tender and the soup has thickened.
- Season with salt and pepper to taste. Enjoy!
Notes
If you are using fresh corn, you will need about 5-6 ears.
If the chowder is too thick, slowly add chicken broth.
If the chowder is too thin, add more heavy whipping cream and bring it to a boil.
