Ingredients

Units Scale

FOR THE PEACH FILLING

  • 4 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 cup unsalted sweet cream butter, melted
  • 1/2 cup amaretto
  • 1 cup sliced almonds

FOR THE COBBLER TOPPING

  • 2 cups all-purpose flour
  • 1/2 cup + 1 tbsp for dusting granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp salt
  • 3/4 cup unsalted sweet cream butter, melted

Instructions

  1. Preheat your oven to 375*F and coat a 9 x 13-inch baking dish with non-stick spray.
  2. Slice your peaches and place them into a bowl.
  3. Add the granulated sugar, brown sugar, ground cinnamon, ground nutmeg, cornstarch, vanilla extract, and melted butter to the peaches, then stir to coat evenly.
  4. Pour the peach mixture into the prepared baking dish, then drizzle the amaretto over and the sliced almonds over the top.
  5. Cover the dish tightly with aluminum foil and bake for about 10 minutes.
  6. While the peaches are baking, make the cobbler topping. Sift together the all-purpose flour, granulated sugar, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt. Slowly stir in the melted butter until it looks like a loose dough.
  7. Pull the peaches out of the oven. Crumble the cobbler mixture over the top of them and dust with more granulated sugar. If some peaches poke through, it is okay.
  8. Place the cobbler back in the oven, uncovered, and bake for 20-25 minutes or until the top is golden brown.
  9. Let the cobbler cool for about 10 minutes before serving. Enjoy!

Notes

  • You can substitute frozen peaches for fresh peaches, just remember to thaw them prior.
  • You may also peel your peaches, but note that the skin will soften during baking.
